People, like most animals, are inherently lazy. We will always pick the lowest hanging fruit first. Grain, which comes from grass, is by far the most difficult food to process in order to eat. This begs the question, why do we eat it when there are so many other, easier options available?
I suggest that a Holocene impact wiped out most other food sources and grass quickly grew to fill the gaps. With little left to eat, humans began eating grain simply because there was nothing else left.
